I am working on training my GSP to point quail.  He is almost 5 months old.  I am very lucky to get to work with him every afternoon for a short amount of time.  I have been training him on live pen raised birds.  I am having trouble with him holding a point.  He will hold for about 10-30 seconds before diving in to bump the birds.  He is quick and most of the birds I have been able to get are no match for him.  I have been working with him on a long lead but he has gotten to the bird on a few occasions before I can stop him.  I have also read David Gowdey's book which has been very helpful.  Any advice will be appreciated.

I'm no expert on hunt training, but you may want to step back from the birds and begin work on your "whoa" training. Once he is solid in his whoa it should help him hold the point, as if you see him letting up you can command the whoa.

Since he has caught the birds you are going to have a harder time breaking him from continuing to try to catch them. Wild birds are the best teachers, but if you are like me the wild birds are hard to find. So, in addition to training whoa, get some bird launchers and as soon as he scents the bids launch them. He will learn fast enough to point further back and hold point. Once you get him pointing further back and holding, shooting some birds over him and letting him retrieve would be a good reward.

That's a good amount of time for a 5 month old.
Are you able to walk up to him?
If not, work on that, if yes, then pick him up and walk away.

Yes, back to yardwork. Put the birds up, and reinforce the whoa...as well as heel and here (come). Checkcord is very important, if he breaks, pick him up and put him back where he was originally pointing, say whoa and then lead him off, as Francine says.

Catching a bird is not altogether bad, many times a young dog can get their interest increased if they are given the opportunity to see what that thing really is. :) Just don't let it continue.

All the above adivce is good.
What is confusing to me is that the OP did not mention the purpose of the lesson, how long the pup is expected/desired to hold point,how the lesson is supposed to end and if the pup actuall has stopped pointing and is merely standing his game.

Are you are following a method/program,using a pros adivce or "winging it"?

If he is holding for that long why isn't the lead in your hand?

For a pup that jumps in the lead MUST always be in your hand.

Set the dog up for success.

You must be able to walk up the lead,around the dog, in front of the dog,be able to tug on the lead,gently push his rear forward then either pick the dog up or walk him off.

Teaching whoa and steadiness on birds may be too early at this age but that would depend on the maturity of the pup.

I work with early maturing pups and 5 months,IMO, is too early to steady on birds. Way more important lessons to be taught at this age,IMO.

I thought 5 months was a little young too to be putting that much pressure on the dog to stand steady on a bird which is why I suggested the launchers and letting the birds do some of the teaching. The one thing I didn't mention and should have is the OP might want to use pigeons at this stage in training. They are cheaper and they fly very well. If you get homers they can be used over and over. Also with pigeons you might be able to do away with the need for the launchers. Although when I plant pigeons they tend to hold their position and Ringo is fast enough he can still catch pigeons. So, depends on the dog and how you plant the birds too. Also if you ask around about pin raised quail that are raised in flight pens you might be able to find some better flying quail as well. In the end, you just want to prevent the dog from catching the bird. With Ringo it took only one catch and I had a problem that needed to be corrected. With other dogs they have caught birds when young, but it didn't seem to matter as much. So again it depends on the dog what it takes in catching birds to make for an issue later.
