I finally made a specific effort to hunt woodcock a few weeks ago. I found a break from schoolwork and took all three neglected pups out for a romp! We had a riot! It took a bit for the dogs to figure out that we were hunting, but they were great. With three dogs running there were several birds that were flushed to our periphery. Lucy would hear the birds look in that direction then look back at me with a questioning glance. I would tell her to "go ahead" and she would track them down. Wilth all our efforts we found eight birds and only came home with one. I need to get a shorter gun...the duck smashing gun is a little long for the tight cover.
Ok here is the big question. I threw it on the smoker with some deer and rabbit we were smoking at work one day. It is not that they are bad tasing....but as my Captain said "it has a catfish sort of flavor" Anyone have a favorite way to prepare them?
I have always been particular to citrus flavors with my game-birds. One of the simplest orange glazes is typically just a jar of orange marmalade! Spread that on the bird, and bake. I also found a nice recipe for an orange glaze using Frozen Orange Juice Concentrate, and butter (or margarine), and perhaps some honey - but I don't know if I can find that again. Not the typical southern recipe - I don't think (smat!), but I could see adding a little Tabasco for some heat... Ok, now my mouth is watering - may have to try some of that on the Phez!
