I finally made a specific effort to hunt woodcock a few weeks ago. I found a break from schoolwork and took all three neglected pups out for a romp! We had a riot! It took a bit for the dogs to figure out that we were hunting, but they were great.  With three dogs running there were several birds that were flushed to our periphery. Lucy would hear the birds look in that direction then look back at me with a questioning glance. I would tell her to "go ahead" and she would track them down. Wilth all our efforts we found eight birds and only came home with one. I need to get a shorter gun...the duck smashing gun is a little long for the tight cover

Ok here is the big question.  I threw it on the smoker with some deer and rabbit we were smoking at work one day.  It is not that they are bad tasing....but as my Captain said "it has a catfish sort of flavor" Anyone have a favorite way to prepare them?

Well, having grown up in the deep South and now being a faux Yooper and living in Yankee territory...I have and always will take FULL offense to the catfish jokes :) Y'all just haven't had the right kind of catfish, and prepared correctly (like the time my mother-in-law wanted to make a "Southern" meal to remind me of home, and served me STEAMED okra).

I bake what my husband brings home in a dutch oven of chicken broth and other spices, wrapped in bacon. Keeps the meat moist and tender and adds terrific flavor. I do the same often for partridge as well.

I have always been particular to citrus flavors with my game-birds. One of the simplest orange glazes is typically just a jar of orange marmalade! Spread that on the bird, and bake. I also found a nice recipe for an orange glaze using Frozen Orange Juice Concentrate, and butter (or margarine), and perhaps some honey - but I don't know if I can find that again. Not the typical southern recipe - I don't think (smat!), but I could see adding a little Tabasco for some heat... Ok, now my mouth is watering - may have to try some of that on the Phez!

It is watching the dogs work that I thoroughly enjoy, and love. I could get by with just watching them work - if it weren't for all the training, and the joy they exhibit when they pick-up, and deilver to hand a bird that they pointed, and you shot. - Todd

After deer season is over and there's a few weeks left of grouse, I'm trying this orange glaze! Sounds delightful! (Assuming hubby can manage to come home with a couple lol)

After deer hunting out in your state many times & everytime we would always at some point put up woodcock either waliking to or from the deer stands I would ask the land owner if they would mind if I brought my dog . They kind of frowned on the idea. Oh well ! I will put together some recipes & post them . A lot of people don't like to eat woodcock as they have a liver type taste in my opinion. As far as grouse for me just fry them up with lots of butter ,salt & pepper...... ummm umm !We had grouse for dinner twice last week . I have never ever froze a grouse for later consumption ! I have heard of dogs that won't retrieve woodcock because they don't care for the taste of the bird . To funny ! They will pick them up & then drop them as if to say yuck !

We stopping shooting them b/c no one wants to eat them.
We use them strictly as a training bird.
Grouse, on the other hand, are good with anything you do with chicken. And then you can use those fancy smancy recipes that are on line.
I like to keep it simple.

Max: I have tried several times to use the dogs to blood track deer (not mine) and every time the dogs get side tracked on woodcocks. But, no one will let me hunt them b/c they don't want their deer ground spoiled by dogs running around. As for the taste I thought it had a bit of an earthworm flavor. I am determined to find a way to cook them.

Pixie: You and your fancy grouse. Central Illinois is sadly void of such delicacy. One of these days I plan on a trip somewhere to snag a few.
