Thought that I would share a pheasant recipe.
This is what we do with our birds that are too shot up for the table.

Pheasant and mushroom sausage (a great recipe for those shot up pheasants) 1lb. boned and cubed pheasant 1/2 lb. bacon cubed 2 tsp kosher salt 1tsp thyme 1/3 cup portabella or shitake mushrooms chopped 2 tbs. brandy or red wine pinch of fresh ground nutmeg 1/2 tsp. allspice 2 tsp. chopped shallots 1 tsp. black pepper 1/8 tsp liquid smoke (optional) 1 1/2 tsp. red pepper flakes Combine all ingredients except pheasant and bacon. Grind all meat in meat grinder then combine seasoning and meat, and process through grinder again. Stuff in hog casing or shape into patty sausage.
