I have about a 500 acre corn field that fills up with doves in the fall after harvest. Would it be good training/ experience to work my dog on those doves just as if they were quail. Typically when a jump them they'll jus fly a couple hundred yrds and set back down...

They will work for some things.
For instance, my dogs don't hunt doves and they completely ignore them.

If your dog is like mine, then you can use the doves for a steadiness exercise.
Work in steady to shot and if you are allowed to shoot them, then a retrieving exercise. Be careful with dove tho - their feathers come out real easily and dogs have been know to swallow them whole.

When I lived near the beach we used seagulls for steadiness training and in the city - pigeons.

Use what is available and have a plan
