First let the breeder know what you are looking for in a puppy. They have the advantage of having watched them for the last 8 weeks and can give you good insight into the different puppies. Based on what you described I would look for a middle of the road pup. Watch them playing and then take them out individually. The ones that get out on their own and explore and are fearless are probably more adventurous than you want. The ones that seem clingy and hang back are probably not the ones you want either. The ones that are somewhere in between are the ones I would look at closely. All that said though, I would also listen to your hear and gut and if one just stands out above the rest then that is probably the one.
